Juicing!

Sometime in 2012, I bought a juicer and didn't do anything with it until last month when my dad told me to buy a Nutribullet. I told him that I didn't need one 'cuz I have a blender and a juicer, and I hadn't even opened the juicer out of the box! He said I should get the Nutribullet anyway, so I did, and gave the unopened juicer to a friend.

So far I've tried many of the 'Phase 1' recipes, the easy, palatable recipes that are basically half salad and half fruit. I use a lot of frozen fruits, and my juices end up tasting quite watery. The other day, however, I bought some orange juice 'cuz that's what I normally do when I don't feel well, and I decided to add some to the Nutribullet instead of a half an orange. Wow. The taste was amazing! Perhaps I am getting a lot more sugar that I am supposed to by doing this, but I really like the taste! In the future, if a recipe calls for an apple or an orange, I'll add some juice. I am also thinking of purchasing a frozen can of concentrate. Who makes juice from concentrate these days?

I can't say that my life has changed dramatically yet, but I do have to say that juicing is fun, and I even used the machine to make the oatmeal banana pancakes with cottage cheese that I mentioned in a previous post. It's nice to have a little machine that can produce small quantities.

Oatmeal Banana Pancakes with Cottage Cheese?

So I went to see a nutritionist last month, and she recommended that I stay away from gluten, wheat, cow milk, soy, and corn. That leaves me with meat, veggies, fruit, rice, quinoa, and non-cow milk/cheese/yogurt. She also recommended that I drink lots of different kinds of tea and an apple cider tincture every morning, and I eat sauerkraut, kimchi, kombucha, grapefruit, beets, a little protein an hour before I go to sleep, and snacks throughout the day. I haven't followed her directions fully, but she did provide me a list of gluten-free snacks, so I thought I'd start my food journey there. One of the items was baked potato with cottage cheese or salsa. Since I wanted to try things on the list, I bought potatoes and cottage cheese - not knowing that one of the main ingredients of cottage cheese was cow milk. I was kind of curious what cottage cheese tasted like, so I got it. I tried it on my potato, and I prefer my normal mix of cheese or my potatoes with salt and pepper and a little bit of olive oil. I don't think I should butter or sour cream on it 'cuz I think those come from cow milk sources. This diet is not going to be easy!

Anyhoo, so now that I have this extra cottage cheese (which I'm technically not supposed to eat, but I'm going to eat anyway 'cuz I bought it). What am I supposed to do with it? I googled cottage cheese recipes, and I came up with 'Cottage Cheese Banana Pancakes' from a body building site. How funny is that?

The pancakes were surprisingly really good. I'm going to try them again in the next coming days and perfect the recipe. I'm thinking of adding a little bit of oil 'cuz the 2nd side stuck to the pan more than the 1st side. I'm also thinking of adding cinnamon and sugar 'cuz it tastes like it needs something more. Other people recommended adding nuts or other fruit. I'll keep playing with it and keep you posted!

I'm sort of sad that Xanga changed their format. Now I can't blog there for free. I downloaded my posts, but they are in XML format. It will take me a while to figure out what to do with it next. That's behind all the other projects that I plan to do. Anyhoo, I just wanted to say 'hi', and say that I'll blogging here now!
